I am wondering what I should monitor on the AP to see how much timing/power the car is pulling because of heat

Ignition Correction (cyl 1-4) would be the monitors, but retard isn't always due to heat. For example it can be caused by low fuel quality.

Any timing compensations due to heat are going to occur where you can't see them and are automatically applied to your timing tables. The only way you would know what is being applied when is to have ATR and log a bunch of different monitors and then do all of the applicable math.
