Gravel travel tire

I recently moved to the country and I chewed up my stock tires in about 3months of use.
I had to put on Michelin X-Ice 185 60 r15. They fit great perform awesome on snow and ice and I don't want to trash them running on hot roads.
I have an awesome commute of about 5 miles of snakey gravel and 10 miles of highway.
I'm thinking about setting up the car more for my environment and running an aggressive tread and tall side wall.
Would a 195/70 or 185/70 LT tire fit?

Neither of those tire sizes will fit at stock height.

On a 15 inch wheel and at stock height, a 195/60 should fit, but a 185/65 will likely rub.
