Multiple Maps on an AccessPort

So, I understand that the Fiesta can store Multiple Maps in the ECU and I can change between them using the cruise control buttons.

I just can't find a lot of really good information on this feature.

Can I set multiple maps myself or do they have to be done by a tuner?

I really want an economy tune for highway driving and rainy days (the 91oct tune just spins way too easy in the rain).

How do I know what tune I am on? Is there a good video or read on this that I just can't seem to find?
