WHAT AM I DOING WRONG? Caliper piston?

2017 fist. Changing all brakes and pads. Ebc red stuff. Used brake tool to rewind piston until I thought I was gonna have a brain aneurysm. Have master cap loose. All going well. Until I screw caliper back together and the wheel will not spin. Feels like pads are too thick or piston isn’t compressed all the way but what else could it be?
