I have booked my vehicle in for a service and been asked if I need to have the plugs replaced(although the car seems fine) and that they need to be NGK high performance at £80 a set....I have done 40,000 miles on existing and wanted to check if this price is indeed correct or the required plugs?

If it's running well, there's no need for that. The stock Motorcraft plugs are fine. Looks like they're trying to upsell you. Get a magnetic plug wrench and do it yourself for the cost of a plug wrench and a gapping tool, for far less than that.

The OEM Motorcraft plugs are NGK plugs.

I can't really comment on the price because I don't know what things cost on your side of the pond.
