What are the options for tuning and coding the car? I see there's the Access Port, what other tools available and what software is used to manually modify the tables and trims?

Access Port is the way too go. There are a lot of tuners tuning for it so you have lots of options. Some of them are JST,Stratified,Dizzy,Moutune , Tune+. Plus there are the Cobb tunes on it as well.
