So I’m shopping for new tires. Curious about handling and general driving characteristics between 205/40R and 215/45R. Obviously the side wall will be taller but does anyone have any experience or input between the two? Thanks.

The 214/45r17s do have a bit more give/softness when going over rough terrain. I use them for autocross and have not felt any loss of turn in/sharpness.

Do note that at full compression you will have rubbing of fender liners. If you have mudflaps they may rub on them as well.

I personally wouldn't run a 215 45-17 on a Fiesta it's a inch taller. I actually have that tire size on my Ford Focus a 205 40-17 definitely has better handling to me.
The most popular up size on this car is a 215 40-17.
