question about setting shock length for 2 piece coilovers

I saw the fortune auto way (youtube) to adjust shock length to ensure bump travel but am not sure how to apply it to the fiesta because I think the bump stops on the rear shocks would be hidden up in the wheel well cavity if I try to compress the back corner with the wheel on to ensure the bump stop is compressed before the wheel rubs on anything.

Does anyone with two piece coilovers installed have any advice? I'm considering the whoosh branded ones, if that makes any difference, to replace my worn stock suspension.
