Welcome!
People generally run 205-225 / 45 / 16 on 16x8. 205 has by far the most options.
As far as tire choice, really depends on what your goals are w/ the wheel setup. Sporty daily? Autocross? Big track?

Fiesta will see spirited driving on the way to the office. Was thinking 225/45 r888r
I've run R888Rs before, personally I find them livable driving to and from a track and that's it. The road noise is crazy high and be prepared to do 10 under the speed limit at the first sign of wet roads.

I'd highly recommend considering a set of ultra high performance summer tires like Firehawk Indy 500 or Yokohama Advan Fleva V701. Still super responsive and grippy without sacrificing comfort or wet traction. Also they'll last way longer than R compound tires.

If you want something in between, Dunlop Direzza Z3 and Falken RT615K+ have a little more life in them compared to some other 200 TW options.

^^True, but those two UHP summer, 340 and 300 tread wear suggestions above fully take away the 215/45-16 and 225/45-16 size options, if JST had his heart set on those sizes. [:(]

I've said it in another thread I think - once my re71r wear out, I'll be buying 245/45s and forcing them to fit on my car with spacers, angle grinder, whatever it takes to fit them. But probably not until this time next year.

215/45R16 on an 8" wheel is nice. Not 205 pinch but not meaty like a 225. I had issues on track with a 205 on an 8" wheel where it would scrub the shoulders out of the thing. The car is lowered and has around -1.8 degrees of camber so the tire was just too narrow. I went 215 with the same alignment settings and it now wears flat on the tread face.
