I don't think the hassle/airbag and seat heater compatibility/warranty issues of aftermarket seats on a NEW FiST is worth it. I doubt very much you can get a stock-like aftermarket solution for even the same 2k option price.
True, as far as "stock-like" goes, but some do NOT want the "stock" type of seat, and there ARE some high quality aftermarket options available for at least a little less than the factory gouging $2K option price, even including the bases and sliders. ;)

As far as warranty and hassles go, the very same could be said of ANY hybrid/BT setups, drilling factory hubs for 4x100 wheels, and any myriad other mods many do to these cars.
Besides, there are no seat heaters to worry about on the base cloth seats, just the air bag dash light.

It should be relatively easy to have the dealer find a new FiST with RECAROS. If it is me (and it was when I bought my CPO), I would hold out for the exact car you want with RECAROS.

Availability of used stock RECAROS is possible, but seems to be extremely limited/rare (at least on these forums)
